Greek Salad



    Ingredients
  • 1/4 cup extra virgin oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 12 cups romaine lettuce, bite size pieces
  • 2 cups cumcumber, peeled, seeded, sliced
  • 4 slices red onion, cut in half, separated into rings
  • 4 tomatoes, cut into wedges
  • 12 Kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup sliced roasted almonds
    Preparation Time: 10 minutes
  1. In large bowl, whisk together oil, vinegar, oregano, salt and pepper. Add lettuce, cucumber, and onion. Toss gently until evenly coated with dressing.
  2. Divide among 4 plates. Garnish with tomatoes and olives; sprinkle with feta cheese and almonds.
